Crunchy Tuna Curry Triangles
Ingredients:
- 1 185g Gold Seas Tuna Chunks in Mild Indian Curry
- 1 small potato, boiled and diced
- 2 tablespoons chopped spring onions
- 8 slices white bread
- ½ bar cheddar cheese, grated
- 2 medium eggs, beaten
- 1 ½ cups panko bread crumbs
- Vegetable oil, for deep frying
Procedure:
- Combine Gold Seas Tuna Chunks in Mild Indian Curry, potato, and spring onions.
- Using a rolling in, flatten out bread slices.
- Top each bread slice with tuna mixture and cheese. Brush edges with egg, then fold to form a triangle. Pinch edges to seal.
- Dip the triangles in egg and cover with bread crumbs. Let sit for 5 minutes before frying.
- Deep-fry in batches until golden brown. Serve.
(Serves 4.)
Golden Tip: Drop some breadcrumbs into oil to test if it is ready for frying. If breadcrumbs burn quickly, the oil is too hot and needs to cool off a bit. But if they bubble steadily and float to the top, the oil is hot enough for frying.
